What's better than sweater weather? Soup season!

Fall weather seems to have arrived here in the East. There isn't anything more comforting when then cold weather hits than a hot bowl of soup for dinner. Chicken corn chowder is my all time favorite (besides cream of crab...I mean come on...MD girl here). Normally when you are trying to lose weight you would steer clear of any creamy soups like a chowder, but I decided to put a lighter spin on this one and it turned out soooo good. It's definitely

going to be a fall/winter staple here at my house. Hope you guys enjoy!

WW Friendly Chicken Corn Chowder

Serves: 5 WW Point Total: 4


Ingredients

  • 1 large red bell pepper diced

  • 1 medium red onion diced

  • 15 oz can diced new potatoes

  • 1/2 tbsp olive oil

  • 5 cups frozen corn (if you have fresh that would work too!)

  • 1/3 cup all purpose flour (plus one tablespoon)

  • 6 cups vegetable broth

  • 3/4 cup fat free half and half

  • 1 tsp Seasoned Salt

  • 1/4 tsp pepper

  • 2 Shredded rotisserie chicken breast


Instructions


1. In a large stock pot over medium heat add olive oil and then the diced red peppers and onion. Cook until onions are soft.

2. When the onions are soft add potatoes, corn, seasoned salt, and pepper. Mix well.

3. Slowly sprinkle the flour over the mixture of vegetables while stirring. Continue to cook and stir for a few minutes. 

4. Add vegetable broth and shredded chicken. Reduce the heat to low and simmer for 20-25 minutes.

5. Stir in half and half. Continue to cook for just a few more minutes.
